MINI CUMPIRS
  • 500 g small potatoes
  • 1 cup grated cheddar cheese
  • 1 teaspoon of salt
  • 1 cup canned corn
  • 2 sausages
  • 1 cup pitted green olives

For the above:

  • 1/2 cup cheddar cheese
  • Put the potatoes in a pot, add water and boil for 20 minutes. While the potatoes are boiling, chop the sausages and olives into small pieces.
  • Peel and mash the boiled potatoes while they are hot. Add the cheddar cheese and salt to the mashed potatoes and mix.
  • Divide the cheddar potatoes into the molds, filling half of the lightly greased muffin molds.
  • Arrange corn, olives and sausages on top, sprinkle with cheddar cheese and bake in a preheated oven at 190 degrees until the cheddar cheese is golden brown. Serve hot.
