Fried Flounder and Haydari Recipe

Materials

  • 4 sole fish
  • 1 bowl of corn flour
  • 1 cap of pepper
  • 1 green pepper
  • 1 teaspoon of chili pepper
  • 1 teaspoon turmeric
  • grated peel of 1 lemon
  • 2 eggs
  • Salt
  • Liquid oil

For Haydari:

  • 500 g strained yoghurt (whipped)
  • Half bunch of fresh dill (chopped)
  • Half a bunch of fresh mint (chopped)
  • 3 tablespoons of extra virgin olive oil
  • 2 cloves of garlic (crushed in a mortar)
  • 1 teaspoon dried mint
  • 30 g cottage cheese (mashed with a fork)
  • Salt

How to Make Fried Flounder and Haydari Recipe?

  • Chop the peppers into very thin dice and mix them with spices, salt and grated lemon peel. Add corn flour and mix. Dip the fish in the beaten egg, then the spicy mixture, and finally the flour mixture. Fry in hot oil.
  • For Haydari, mix all the ingredients except olive oil. Transfer it to a serving plate and pour olive oil on it. Serve alongside fried sole fish.
