Materials
- 4 sole fish
- 1 bowl of cornmeal
- 1 capsicum pepper
- 1 green pepper
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Grated rind of 1 lemon
- 2 eggs
- Salt
- Liquid oil
For Haydari:
- 500 g strained yogurt (whipped)
- Half a bunch of fresh dill (Chopped)
- Half a bunch of fresh mint (Chopped)
- 3 tablespoons of extra virgin olive oil
- 2 cloves of garlic (crushed)
- 1 teaspoon dried mint
- 30 g cottage cheese (crushed with a fork)
- Salt
How to Make Sole Pan and Haydari Recipe?
- Chop the peppers into very thin dice and mix them with spices, salt and grated lemon peel. Add the cornmeal and mix. Dip the fish in the beaten egg first, then the spicy mixture, and finally the flour mixture. Fry in hot oil.
- For Haydari, mix all the ingredients except olive oil. Transfer to a serving plate, pour olive oil over it. Serve alongside the fried soles.
