- 1 coffee cup of wheat (Soaked)
- 2 liters of water
- 4-5 Brussels sprouts
- 1 artichoke (Cleaned)
- 200 g strained yogurt
- 1 tablespoon of flour
- 1 egg yolk
- 1 tablespoon of butter
- 1 tablespoon of oil
- Salt
- dried mint
How to Make Wheat Vegetable Yogurt Soup Recipe?
- After washing and draining the wheat several times, transfer it to the pot. Add the water. Boil the wheat until soft. Heat the oil in a separate small pan and sauté the diced artichokes and the Brussels sprouts, each cut into quarters. Take it from the stove.
- When the wheat is soft, add the vegetables. Boil for 5 minutes. In a separate bowl, mix the strained yogurt, egg yolk, a few tablespoons of boiling soup water, flour and dried mint. Slowly add this mixture to the boiling soup. After stirring quickly and boiling for a few more minutes, add the salt and butter last. Boil for 1 more minute and remove from heat. Serve hot.
