- 1 cup of mixed quinoa in 3 colors
- 2 tablespoons of chia seeds
- 2 tablespoons of flaxseed

- 2 tablespoons of coconut oil
- 1 packet of baking powder

- Take the 3-colored quinoa in a bowl and add enough water to cover it. Cover the bowl with cling film and leave it in the refrigerator overnight. Soak chia seeds and flax seeds in half a glass of water overnight to get a gel consistency. The next morning, drain the quinoa well and put it in a mixing bowl.
- Add amaranth with a mixture of chia and flax seeds. Lightly heat the coconut oil in a small skillet until soft. Add the baking soda, salt, egg, water and lemon juice and mix with the dough mixer for about 3-4 minutes until all the ingredients are well matched.
- Transfer the mixture to a baton mold lined with wax paper. Bake in a preheated 180 degree oven for about 1.5 hours. Take it out of the oven, let it rest for half an hour and serve by slicing.
