- 2 tortillas

- 5~6 shallots
- 1 piece of roasted red pepper
- 2~3 sprigs of basil
- 1 cup boiled Mexican beans
- 1 cup of canned corn
- 1 tablespoon of butter
- 1 teaspoon of flaxseed
- Salt
- Black pepper
- 1 cup grated cheddar cheese
How to Make Mexican Bean Buritto Recipe
Finely chop the shallots, roasted red pepper and basil and place in a large skillet. Add the boiled Mexican beans, corn and butter and sauté until the vegetables are soft. Season with flax seeds, salt and pepper and remove from heat. Divide the stuffing on the tortillas. Sprinkle grated cheddar cheese on top, fold in half, and toast in a toaster or pan with traces. Cut in half and serve hot.
