Peel the eggplants in various parts and chop them into two centimeters thick. Put the minced meat in a bowl. Add the grated onion, finely chopped parsley, salt and pepper and knead. Cut walnut-sized pieces from the mixture and prepare meatballs.
Arrange one eggplant and one meatball side by side vertically in a round baking dish. Drizzle olive oil over them. Mix tomato paste and water in a bowl and pour over the meatballs and eggplants. Bake in a preheated 200 degree oven for 35-40 minutes. Serve hot.
