  • Salt, black pepper, chili pepper (according to taste and preference)

How to make:

  1. First, scratch the eggplants lengthwise using a peeler. Then leave it in salt water for half an hour. This process takes the bitterness out of the eggplants and allows them to cook more easily.
  2. Meanwhile, finely chop the onion and crush the garlic.
  3. Heat oil in a pan and add chopped onions and fry. When the onions turn transparent, add the garlic and fry for a few more minutes.
  4. Add the minced meat and fry until the minced meat releases its water and absorbs it. When the minced meat absorbs its water, add salt, black pepper and optionally chili pepper. Cook the minced meat thoroughly by mixing the spices.
  5. Grate the tomatoes and add them to the roasted minced meat. Then add tomato paste and mix. Cook over low heat for about 10-15 minutes until the tomatoes are thoroughly cooked.
  6. Remove the eggplants from the salt water and dry them with paper towels. Then, scoop out the inner parts of the eggplants with a spoon. Put the eggplants you carved into salt water to prevent them from darkening.
  7. Add oil to a frying pan or a large pot and fry the eggplants both front and back.
  8. Place the fried eggplants on a plate and press them lightly with a paper towel to absorb excess oil.
  9. Carefully fill the prepared minced meat mixture into the inside of the fried eggplants. Place a slice of tomato on the eggplants.
  10. After filling all the eggplants, add oil to the pot or pan and arrange the eggplants. Make sure to place the eggplants evenly by pressing them lightly.
  11. Cover the pot or pan and wait over low heat for about 20-25 minutes for the eggplants to cook thoroughly. Make sure that the eggplants are soft and absorb the flavor of the stuffing thoroughly.
  12. Serve the karnıyarik dish hot. You can sprinkle freshly chopped parsley on top. Karnıyarık, usually served with rice or yoghurt, is one of the most popular dishes of Turkish cuisine.
