Wash and drain the green lentils. In a medium-sized pot, add enough water to cover it, boil it until it becomes soft, then strain it and place it in a deep bowl.
Mix all the ingredients needed for the sauce in a bowl. Pour it over the warm lentils and stir to absorb the sauce. Finely chop the green pepper, red pepper, spring onion and parsley, add them to the lentils and mix again. Season with salt and red pepper flakes and serve.
