Red Bean Meatballs

Ingredients for Meatballs

  • 150 g boiled fresh kidney beans
  • 1 egg
  • 2 tablespoons of breadcrumbs
  • 1 tablespoon soy sauce
  • 2 tablespoons finely chopped parsley
  • Salt
  • Black pepper

  • Sunflower oil

  • 4 hamburger buns
  • 4 tablespoons grated tomatoes
  • 1 teaspoon of pepper paste
  • Half a cup of sliced green olives
  • 8 pieces thinly sliced pickled cucumber
  • 4 leaves of lettuce

How to Make Kidney Bean Meatballs?

Puree the boiled fresh kidney beans in a food processor. Put it in a large mixing bowl and add the egg, breadcrumbs and soy sauce. Knead until all the ingredients are combined. Tear off large pieces of meatball dough and shape them into hamburger meatballs. Coat it in breadcrumbs and let it rest in the refrigerator for 30 minutes. Fry the rested meatballs in hot oil until golden brown. Drain it on a paper towel to absorb excess oil. Cook the grated tomato with tomato paste in a small saucepan until it thickens slightly. Lightly toast the hamburger buns in the toaster. Spread a tablespoon of the tomato sauce you prepared on the base of each bread. Place sliced green olives, kidney bean patties, pickled cucumbers and lettuce leaves on top, respectively. Cover with another slice of bread and serve hot.
