Zucchini Recipe with Olive Oil
Chop the onion into cubes and sauté it in olive oil until it turns pink. Add tomato paste and fry for 1-2 more minutes. Add the zucchini, red pepper and carrots chopped into strips. Add salt, sugar and hot water and cook over low heat until it softens. Serve warm.
