How to Make Bulgur Meatballs with Chard and Yogurt Sauce Recipe?
Wash the bulgur with plenty of water and drain the water. Place it in a bowl and pour hot water over it. Close the lid and let it sit for 20 minutes. Add flour and salt to the softened bulgur and mix. Add the egg and tomato paste and knead thoroughly, wetting your hands in between. Prepare marble-sized meatballs from the dough and cook in boiling salted water until soft. Wash the chard, chop it finely and boil it until it becomes soft. Drain the water thoroughly. Heat the olive oil in the pot and sauté the chard for a few minutes. Season with salt and pepper. Grate the tomatoes. Add tomato paste and olive oil and cook well over medium heat. Season with salt, pepper and cumin. Add the cooked meatballs to the sauce and mix well. Whisk the yoghurt with grated garlic in a large bowl. Place the chard on a serving plate. Spread yoghurt on top. Place the meatballs with sauce on top and serve hot.
